What does "taste of home" actually mean here?

It means the everyday repertoire, not the showpiece one. Dal, rajma, chole, kadhi, a seasonal sabzi, paneer dishes, biryani — the rotation a household actually runs across a week, portioned as one person's dinner rather than as a sharing dish for a table of four.

How is the food cooked?

In small batches, by one family, from recipes that were handed down rather than developed for a menu. Every dish starts with its own masala — onion, tomato, ginger and garlic, bhuno'd until the fat separates — because there is no standing base gravy to ladle from. Can you choose how spicy the food is?

The food is cooked at one level: milder than a restaurant curry, spiced rather than hot. That is the level a family eats at every day, and it is deliberate — it lets the masala come through instead of the chilli. If you want more heat, it is easily added at your end.

Is there a vegetarian menu?
