Rajma is kidney beans; chawal is rice. Together they make one complete plate. The beans are soaked overnight, then simmered until they are soft enough to crush against the roof of your mouth, in a masala that has been cooked down until the oil separates. The gravy is thick rather than soupy, deep red-brown rather than bright, and it soaks into the rice so that the last few spoonfuls are the best ones.
